Finca Volcán Azul, what a name! They are the super stars of Costa Rica. A coffee farm with a long history of accolades, competition wins and supplying weird and wonderful coffees the world over. For five generations this farm has pushed the boundaries of quality and production.
Finca Volcán Azul reserved part of the farm to produce micro-batches of a range of varietals, using a variety of coffee processes to highlight the unique qualities of each. We have chosen to roast and present an H3 Hybrid varietal that has been processed as follows. Firstly fresh coffee cherries are pulped but left with 100% of the mucilage still on the beans before being taken to raised beds where they are covered in plastic to protect from any moisture fluctuations. The mucilage covered beans are then stirred each day from 8am to 2pm, and covered again. This Red Honey process will take between 9 and 12 days depending on the weather.
