In the stunning mountains of Chalatenango, you'll find Finca La Joya, a mesmerising microclimate farm led by Maria Pedrina, Jose Guillermo, and their son. Maria inherited land from her father, and Jose, engaged in a church project, was inspired to grow coffee after a visit to a project leader's house. With limited resources, the church leaders supported their coffee venture, sparking their journey.

For over 15 years, the family has dedicated themselves to coffee production. However, in the 2023 harvest, Maria began selling her coffee in the specialty coffee market. Maria attributes her success to fertile soils, high elevation, microclimate, and meticulous agronomic practices. Maria’s farm boasts various coffee varieties, with Catuai comprising 67% and Pacamara 33%.

Maria emphasises selective harvesting, with natural fermentation in clean bags for 18 to 20 hours followed by thorough washing and careful transfer to raised beds. After a 2-3 day pre-drying process, the partially dried coffee undergoes an 8-day final drying stage at home.
