The region contains a multitude of micro-regions, creating complex profiles depending on the washing station a particular coffee is from.
The process of producing Washed coffees in Ethiopia varies slightly from washing station to station. Generally the coffee is picked ripe and de-pulped the same day. fermented for a period of 8–12 hours in open-air tanks, then washed in water channels to remove the mucilage. Then, coffee is spread on raised beds to dry for 5–15 days, depending on the weather of course.
